Vegan Spirulina Gelato

Who says ice cream isn't a superfood? With only a few ingredients, this healthy treat comes together in no time.

Ingredients

  • 2 14-oz cans of full-fat coconut cream (chilled overnight in the fridge)
  • 12 oz pitted dates (soak in warm water for 15 minutes to soften)
  • 1 to 2 pods of room tempurature spirulina
  • 1 tsp pure vanilla extract
  • Optional: Add 1/2 cup pistachios into the food processor until powdery and add for a pistachio flavored 'gelato'

Instructions

  1. In a blender or a mixing bowl, combine all the ingredients until thoroughly combined. 
  2. Transfer the mixture to a bowl, cover it, and keep it in the freezer for a minimum of four hours. 
  3. When ready to serve, let the ice cream thaw for 10-15 minutes.
  4. Sprinkle some whole pistachios or some cacao nibs on top before serving.
