Enjoy the cozy Italian dish you know and love with a protein-packed twist. A handful of pine nuts, plenty of basil, and a scoop of our fresh spirulina.
Ingredients:
Pesto sauce
- 1 pod of fresh spirulina
- 1 1/2 cup basil leaves
- 1/2 cup pine nuts (you can use almonds or cashews if you don't have pine nuts)
- 5 cloves of garlic (increase or decrease to your taste, we love a lot of garlic!)
- 1/2 cup silken tofu (optional if you want extra protein)
- 1/3 cup olive oil
- salt and pepper
- 1/2 cup grated parmesan cheese if not vegan
Pasta
- 2 cups pasta
- Cherry tomatoes
- 2 cups arugula or spinach
- 1-2 tsb fresh chili flakes to taste
- More parmesan cheese to taste if not vegan
Instructions:
- While the water boils for the pasta, make the pesto by adding everything into a blender and pulse until it becomes a smooth consistency.
- Once the water is at a rolling boil, add the pasta until it's al dente.
- Strain the pasta and drizzle olive oil on top.
- Add in the pesto sauce, chopped cherry tomatoes and arugula or spinach, depending on your preference.
- Serve immediately.
