What better way to utilize spirulinas many health benefits than with a nourishing buddha bowl, perfect for lunch or dinner!
Serves 2-3 people.
Bowl ingredients
- 1 cup brown rice
- 1 avocado
- 1 pack of cherry tomatoes
- 1 cup purple cabbage
- 1 cup of green beans
- 1/2 bell pepper
- 1/2 cup mushrooms
- 1 pack of tempeh
- 2 lemon slices
- 1/2 cup loosely chopped walnuts
- 1/2 cup green onion
- 2 tbs sesame seeds
- ½ cup organic miso
- 3 tbsp coconut aminos
- 2 tbsp tahini
- 4 cloves fresh garlic, minced
- 1 ¼ tbsp fresh ginger, minced
- 2 tbsp natural peanut butter
- 2 tbsp fresh squeezed lime juice
- 1 cup avocado oil
- 1 cup water
- 1/2 tsp black pepper
Instructions
- Cook the brown rice (1 cup rice to 2 cups vegetable stock or water)
- Prep the vegetables by chopping the avocado, tomatoes, cabbage, green beans, bell peppers and mushrooms.
- Heat a pan and drizzle some oil into the pan. While the pan heats up, slice the tempeh into bite sized pieces. Fry the tempeh for a few minutes on each size and season with salt.
- Combine all the miso sauce ingredients into a medium sized bowl and whisk together.
- Assemble your bowl by putting down a base layer or rice, and then topping with all of your vegetables.
- Finally, add your lemon slice, chopped walnuts, green onion and sesame seeds. Drizzle the dressing on top or serve on the side.
